Linguine with Tomatoes and Basil

4 ripe tomatoes, cut into 1/2 inch cubes
1 pound Brie cheese, rind removed, torn into irregular pieces
1 cup cleaned fresh basil leaves, cut into strips
3 garlic cloves, peeled and finely minced
1 cup best quality olive oil
salt to taste
1/2 tsp freshly ground pepper
1 1/2 pounds linguine
freshly grated imported Parmesan cheese (optional)

1. Combine tomatoes, brie, basil, garlic, 1 cup olive oil, salt and pepper in a large serving bowl. Prepare *at least* 2 hours before serving and set aside, covered, at room temperature.
2. Bring 6 quarts of water to a boil in a large pot. Add the linguine and boil until al dente, about 10 minutes.
3. Drain pasta and immediately toss with the tomato sauce. Serve immediately.

Serves 4-6

Mmmmmmmm! I love tomatoes from the garden and fresh basil!

I wonder if I could sub mozzarella for the brie...just to make a less costly dish...(although these days dh and I indulge ourselves quite a bit with good food)...

Sure -- why not experiment with the cheeses? The cheese is supposed to be ripe. I have the Silver Palate Cookbook (which is where this recipe if from -- should have said that earlier), but to avoid typing it all out found it on a blog and copied and pasted. The blogger said "Brie, Camembert and very soft goat and sheep cheeses work well. Make sure your cheese is ripe, but most importantly use a good vine-ripened tomato and the fresh basil which is, of course, a classic combination."

Oh My!! This sounds delish!! I love pasta. Unfortunately my dh doesn't, so I hardly ever make pasta dishes. But I may make this even if it's just for me! Wink

I have this same exact recipe sans the brie. We generally sprinkle fresh romano cheese on top, but this sounds good!

Jenni, I made my normal recipe today but added feta cheese to it and let me just say, "OH MY!!!!" Yummy!

Jen, this is a wonderful recipe! I did tweek it just a bit to lower the calories-half the oil, half the cheese, but kept everything else the same, well, except for the garlic which I doubled (YUM). Very Happy
Thank you for sharing this!!!!!

ETA: I wanted to say that I left the rind on. Since it's edible, I just cut it off, then diced it. There's seems to be a lot of waste otherwise.
I have a batch of this going on my counter top right now, but I'm trying it with light Brie this time.
